“UNIQUE”:
THE WINERY OF IES SANTIAGO APOSTOL
This “unique” vineyard is situated in Tierra de
Barros. The grapes and the wines in this area have an economical and cultural
interest. This winery is placed in Almendralejo, a village in the South of
Badajoz and it’s a traditional and ecological factory. Almendralejo is well
known for its vast vineyard and for the extraordinary qualities of its grapes.
It’s a young wine with a soft
texture, pure and elegant, to be served in the best tables with the best
company…
Our
white wine is produced in oak barrels. Characterised by its tasty flavour and
exuberant odour, it’s a young wine touched with the magic of our local grape
variety. This wine has a medium wide acidity and special aromatic compounds
that gives it its rich flavour. It tempts to be fairly dry wine but the
intensity of ripe fruit flavour can give the appearance of sweetness.
If you
want one of the most unique whites around, look no further. It is one of the
most different types of white wines and needs to be tried.
As far
as the red wine is concerned, you should enjoy the pleasure of tasting this
wine; it is the best of all choices. Its aroma, flavour and body are unique.

Red wine is red because it was fermented with the
skins, making it more tannic. White wine has less tannin, and is more acidic.
Dessert wines have higher alcohol content and are usually sweeter, and
sparkling wine has bubbles.
Stopping at red
vs. white wines would be like ending a discussion on vehicles at cars vs.
trucks.
There is perhaps nothing more subjective about
humanity than taste, and trying to find common ground when talking about wine
with our limited vocabulary seems a difficult task.
They are:
Sweetness. The opposite of sweet is dry. A wine can
also be medium-dry or off-dry
Acidity: It is a big deal for white wines, and it
makes them refreshing.
Tannin: It’s all about the tannins for red wine. High
tannin wines are bitter. Lower tannin wines are smooth and soft.
Body. This refers to the perceived “weight” and
viscosity of the wine. A full-bodied wine feels thick, coating the sides of the
glass as you swirl. A light-bodied wine is almost like water. A medium-bodied
wine is in-between.
Flavours: fruity, earthy, spicy, smoky or flowery.
In the wine world, you’ll hear about “oak” or “oakness”
or “an oaky quality.” Oak flavour gets in your wine when it is either fermented
or aged in oak barrels. Many wines are fermented and aged in stainless steel
casks.
